I discovered how well my mincemeat recipe works stirred through porridge. With a combination of nuts, fruit and spices, it's like having a mince pie for breakfast!
Of course, mincemeat is associated with Christmas, however, I believe that this can be enjoyed at any time of the year. After all, it is simply nuts, fruit and spices.
Ingredients
40g porridge oats
200ml water
3 tbsp mincemeat
step 1
Combine the oats and water in a small saucepan and cook on a low heat for 5 minutes. Stir occasionally to avoid sticking. If it becomes dry, add some more water.
step 2
Stir the mincemeat through the porridge and heat for 2 minutes. Transfer into a bowl and top with some more mincemeat if desired.
Notes
- To add some omegas into your meal, sprinkle with some seeds. I like to use sunflower and pumpkin seeds.
- You could replace the water with a plant-based milk or use half and half to make the porridge creamier
- I add additional cinnamon to the mixture fo extra spice.
