Serves 2-3
Sometimes a meal just needs a rich, comforting sauce. My desired combination is with mashed potato. I love the salty, savoury addition from the soy and tangy presence of the mustard.
Ingredients
1 tsp coconut oil
1 large onion, diced
2 tbsp plain flour
400ml stock
2 tbsp soy sauce
1 tbsp wholegrain mustard

Heat the oil in a medium frying pan. Add the onion, then cook on the lowest heat with the lid on for 15-20 minutes. Stir every so often to prevent it from sticking.

Add the flour and mix well. Slowly pour in the stock, slightly increase the heat and begin to stir to break up the flour. A whisk may help to break up any lumps.

Stirring constantly, add the mustard, soy sauce and season to taste. Allow to thicken until it reaches desired consistency.
Notes
- Add a little water and reduce the heat if it thickens quickly and too much.
- I like to dice the onion quick chunky because I like the texture within the sauce.
