Eating Mexican food is a really wholesome meal for me because as a family, we all take part in making various components. I really enjoy having multiple bowls that we pass around and take as much or as little as we want which brings a sort of social element to the meal.
Guacamole is a necessity whenever I eat Mexican food. Firstly, it’s delicious! It also helps to cool the other spicier dishes and bring a creamy texture to the meal.
Avocado is a very creamy fruit already, but for this recipe I have added silken tofu. This makes it so smooth and a lovely lighter green colour which contrasts so well with the red onion. To prevent having a bowl of purée, I held back 1/2 of the avocado and onion to be stirred through afterwards.
Ingredients
1 avocado
150g silken tofu
1 lime, juiced
1/2 green chilli, de-seeded
pinch of salt
1/2 small red onion

Put 1/2 of the avocado, tofu, lime juice, chilli and salt into a blender. Blitz until you have a completely smooth purée.

Roughly chop the other half of the avocado and finely chop the onion.

Transfer the purée into a medium bowl and stir through the avocado and onion. Season with extra salt and pepper if necessary.
Notes
- If you prefer it spicier, simply add more chilli and/or include the seeds.
- To have a more acidic sauce, include the lime zest too. Otherwise, save for another recipe.
