Mint Chocolate Porridge

Cacao in porridge is one of my favourite things. For this recipe, I have paired it with fresh mint. These two flavours pair each other beautifully and are sweetened from the chunks of banana.

Cacao powder is perfect to make a dish delicious and chocolatey whilst getting cacao’s natural benefits such as being high in magnesium and copper, both being important nutrients, especially to start the day with.


Mint is great for indigestion problems as it relaxes the muscles which prevents them from contracting. To prevent digestive symptoms, you could try drinking mint tea.




Ingredients


40g oats

1 tbsp flax seeds

200ml water/plant milk

1 tbsp cacao powder

small handful mint leaves, finely chopped (about 1 tsp)

1 banana, cut into semi rounds

2 tbsp mixed seeds


step 1

Combine the oats, flax and water/milk in a small saucepan, bring to the boil.

Reduce the heat, add the cacao and cook on a low heat for 5 minutes. Stir occasionally to avoid sticking. If it becomes dry, add some more liquid.

Once the porridge is almost at your desired consistency, add the mint and banana. Cook and stir for another 2-3 minutes.

Transfer into a bowl and sprinkle with the seeds and decorate with mint leaves if desired.


Notes

- I love banana in porridge, I put it in every time. You could alternatively use fruit like pear.


- If you don’t have fresh mint, you could try making the recipe with a cup of mint tea instead of water/plant milk.


- Using fortified plant milks are a great way to get some further nutrients into your breakfast such as calcium and vitamin D. Water does work perfectly fine though if preferred.
