Beetroot Breakfast Smoothie

Serves 1


Beetroot is full of vitamins, minerals and fibre. It is packed with powerful antioxidants. Antioxidants are believed to help reduce the oxidation of LDL Cholesterol. Besides the amazing nutritional properties, it also makes food such a stunning, intense colour.


This drink works as a complete breakfast meal or substantial snack with the inclusion of oats.

The banana then adds a light sweetness and cinnamon adds a soft spice. Altogether these ingredients make a delicious and beautiful smoothie.

Using frozen fruit prevents oxidisation, ice can be used too. It also helps to thicken the drink.



Ingredients


1/2 medium beetroot

1 frozen banana

40g oats

100ml unsweetened almond milk

1 tsp cinnamon

1 tbsp chia seeds

Combine all of the ingredients into a blender and blitz until the smoothie is completely smooth.


Notes

- I use raw beetroot, this way no nutrients have been lost in the cooking process.


- Use more milk if the drink is still too thick.


- If the drink isn’t sweet enough for your preference, add a couple of dates.


- Try and chew your smoothie with every sip to aid digestion.
