I’ve recently started to make smoothies in the evening that I then soak my oats in overnight. I’m then left with really delicious overnight oats the next morning. Overnight oats are so convenient for when you have limited time in the mornings, you may just have to leave it out of the fridge for a few minutes so it isn’t too chilly.
By using smoothies instead of milk or water, you have a breakfast that is full of fruit and some vegetables (spinach) which are full vitamins, minerals and fibre. They’re also vibrant and so enticing which makes them even more enjoyable.
Ingredients
1 portion Pineapple & Spinach Smoothie (recipe below)
45g oats
2 tbsp mixed seeds
1/2 banana
1 tbsp puffed quinoa

Combine the oats and smoothie in a bowl and leave in the fridge overnight.

Remove from the fridge and allow to come up to room temperature. Meanwhile, slice the banana into rounds and lie on top of the oats, sprinkle with the seeds and quinoa.
Puffed quinoa can be purchased pre-puffed or alternatively you can have a go yourself.
Thoroughly wash the quinoa, leave to dry and then add to a hot pan. Place a lid on top and you will hear them popping. After a couple of minutes, turn off the heat and allow to cool down. Store in an airtight container and enjoy on breakfasts or sprinkle over salads.
Notes
- Other toppings options are chia seeds, fresh berries, fresh pineapple, hemp seeds. Be creative and use what you have in your cupboards.
- Try overnight oats with other smoothie recipes. My berry smoothie would be particularly delicious.
- If you are rushed in the mornings to eat breakfast, make your oats in a jar or container and you can have it on the go.
